Avocado Pesto Salmon Pinwheels {Paleo, Gluten Free, Dairy Free}
Avocado pesto salmon pinwheels are a healthy paleo snack or even an elegant appetizer for your next party. It's a healthy bite that’s Paleo, grain free, gluten free, and dairy free.
I eat a lot of salmon.
It's a nutritional powerhouse.
And it tastes good.
I even eat salmon for breakfast.
I don't mean loaded on a gluten filled bagel with processed cream cheese.
I mean smoked with my dairy free hemp lime cream and on a cucumber, but sometimes that doesn't fill me up. So I created these avocado pesto salmon pinwheels, loaded with healthy fats for a filling paleo breakfast or snack.
You could look at this salmon avocado roll-up and think fancy appetizer. And you wouldn't be wrong.
If it's good enough to serve company, it's good enough for you, right?

Of course, all salmon is not created equal. You want to steer clear of farmed salmon.
Farmed salmon has been shown to have high levels of toxins, pesticides, and mercury. That is something you don't want in your system.
Farmed salmon also has a much lower level of Omega-3s compared to their wild counterparts, so remember to stay wild my friends.

Fat keeps you full and keeps your body operating at high levels.
Just make sure to avoid the bad fats found in processed food. Avocado is always a good fat choice, in moderation of course.

Avocado Pesto Salmon Pinwheels {Paleo, Gluten Free, Dairy Free}
Makes 16-20 pinwheels
Ingredients
8 ounces of smoked salmon
2 ripe avocados, peeled with seed removed
1/4 cup pesto (use my kale pesto or spinach mint pesto)
Instructions
Take a piece of saran wrap and place it flat on a level surface. Lay pieces of salmon (about 4 ounces) side by side so it overlaps and makes one large piece (see picture above). Take one of the avocados and mash it so it's spreadable. Then spread the avo mash across the salmon, leaving room on each end for rolling. Top with half of the pesto. Start on one end and pull the wrap up and over to begin tightly rolling it. As you roll, move the saran on top and gently squeeze the mixture together so it stays cohesive. When you get to the end, wrap the roll in the saran and refrigerate for a few hours or overnight to set (or slip in the freezer for an hour). Repeat with remaining ingredients.
After it's set in the fridge or freezer, remove the wrap and slice into pieces. Enjoy immediately.
