I remember when I went gluten free, I wondered if I’d ever eat a sandwich again. Sandwiches are such an easy lunchtime dish, whether you’re at home or on the go. Luckily I soon learned that there were many breadless sandwich options.
You can still enjoy all the sandwich fixins, with none of the bread or gluten.

Coconut Wraps
I’m a big fan of coconut wraps. They’re a great substitution for breadless sandwiches. NUCO coconut wraps are my favorite since the only ingredients are coconut meat, coconut water, and coconut oil.
Turkey Tzatziki Wrap
I love these turkey tzatziki wraps but you can swap out your favorite protein if you prefer chicken or even fish. Top it with one of my favorite dairy free dips.
Collard Greens
Lightly steamed collard greens make for a great breadless sandwich wrapper. I steam a few collard greens at a time and have them at the ready to throw in my favorite ingredients. I love using them to make a healthy low carb, gluten free chicken burrito.

Polenta
Polenta can stand in as a healthy gluten free bread. You can crisp it up so it can act as an open face sandwich.

Tortillas
You can also use regular old tortillas. Non-GMO organic corn is your best bet. Try these chicken tacos with them.

Seaweed is so good for you and makes for a great wrapper for a breadless sandwich. I like Emerald Coves organic sushi nori.

Lettuce Cups
Lettuce always works for a breadless sandwich. If I don’t have coconut or seaweed wraps, a nice piece of Romaine or Bibb lettuce always does the trick. There’s so many options of what you can do.

Roll your ingredients up and make bite size breadless sandwich pieces using cucumber.

You can bake slices of sweet potato and top with items, or stuff a sweet potato with your favorite ingredients and you have a great one dish meal.

Of course you don’t need to wrap some sandwich fixins in anything if you don’t want. You can simply have a bowl of all your ingredients. Yes, this could be called a salad but you can be more creative than that.
