Chocolate Blueberry Nut Clusters {Paleo, Vegan, Sugar Free}
Chocolate blueberry nut clusters are an easy healthy dessert or snack. There are just a few real food ingredients needed, and it's Paleo, gluten free, dairy free, vegan and free from refined sugar.
Blueberries may just be my favorite fruit.
Shhhhh, don’t tell the other fruits.
They have the right amount of natural sweetness.
They’re bite size, easy to handle, and super healthy.
So with lots of blueberries in my fridge comes this recipe for chocolate blueberry nut clusters.
My blueberry surplus wasn't entirely my fault.
I went to one of my fruit guys at the farmer's market to buy lemons and he said, you have to try the blueberries this week.
They're incredible.
One bite later, I was taking yet another basket of blueberries home with me.
I don't eat much sugar outside of some fresh fruit, but I do like a little chocolate from time to time.
Of course I make sure the chocolate doesn't include refined sugar, and yes, there are a few brands out there who are sugar-free like Lilly's.
Lilly's uses stevia in a few of their products and stevia (in moderation) works for me.
It's a much better alternative to sugar as it doesn't spike your blood sugar. It comes from a leaf and has no carbohydrates, calories or artificial ingredients, so I'm in.

So these chocolate covered blueberries couldn't be easier to make if you’re looking for a healthy dessert or snack.
Melt some chocolate, dunk the berries and sprinkle your favorite nuts on top.
I like walnuts with this combo but use your favorite.
You just need to refrigerate them for a little while so they set.
And bonus, with the chocolate, blueberries, and walnuts you’re getting health benefits from Vitamin C, magnesium, Omega 3s, and antioxidants. Not bad, right?

Chocolate Blueberry Nut Clusters {Paleo, Vegan, Gluten Free, Dairy Free, Refined Sugar Free}
Makes about 20
Ingredients
1 cup fresh blueberries, preferably organic
1 cup vegan, sugar-free chocolate chips like Lily's
1 tablespoon extra virgin coconut oil
1/4 cup chopped walnuts (or other favorite nut)
Instructions
Melt the chocolate chips and coconut oil in a double boiler, stirring constantly until smooth. Remove from heat.
Place parchment paper on a baking sheet. Add the blueberries to the chocolate mixture and remove with a slotted spoon, creating little piles on the parchment. Top with walnuts and then place in the refrigerator for approximately 30 minutes or until set. Enjoy!
