Coconut Peach Popsicles {Sugar Free, Dairy Free}

This recipe for coconut peach popsicles couldn't be easier to make, or healthier.

If you have kids and they can't get enough cool desserts, then they're going to love these.

Or if you simply love a sweet treat, without the dairy or sugar, you're going to want to make a dozen of these popsicles to have on hand all summer long.

The recipe for these coconut peach popsicles comes from the Well Vegan duo Katie Koteen and Kate Kasbee.

They’re the duo behind the cookbook called Frugal Vegan cookbook.

The book is a good one because, as the name suggests, the plant-based recipes all use inexpensive ingredients that are easy to find. 

The cookbook has dishes for every time of the day.

You can start your day with sweet potato breakfast boats, then move to a cool and refreshing watermelon gazpacho.

Lunchtime could include a crunchy Thai salad, while dinner could be cauliflower steaks with sautéed greens.

There's a whole "Get Sauced" chapter with great spreads and dressings like cilantro tahini, chimichurri sauce, and curry dressing.

Due to the summer heat, I flipped right to the desserts and landed on the sugar free, dairy free coconut peach popsicles.

I have never tried making my own popsicles, but with just three ingredients, it was a no-brainer.

Since these vegan popsicles are so healthy, I don't feel guilty eating them any time of day.

Coconut Peach Popsicles {Sugar Free, Dairy Free}

From the Frugal Vegan by Katie Koteen and Kate Kasbee

Makes 4

Ingredients

  • 1 ripe peach

  • 6 ounces vanilla coconut milk yogurt

  • 1/4 cup water

  • Fresh basil or mint, optional

Instructions

  1. Cut the peach into quarters, discarding the pit. Place all of the ingredients into a blender. Blend until smooth and pour into popsicle molds to freeze (I bought these popsicle molds). Freeze for 3-4 hours before serving.
