No Bake Super Seed Bars {Nut Free, Grain Free, Sugar Free}

No bake super seed bars are a healthy paleo snack that are nut free, grain free, and sugar free. 

Healthy snacks can be one of the hardest things to come by. I'm not a fan of all of the ingredients in power bars. There's often a lot of preservatives and sugar. Dates count as sugar you know. So I made a nut free, grain free, and sugar free no bake super seed bar to help with snack time.

Yes, I omitted nuts from these bars. While nuts can be a great source of energy, they contain phytic acid. Some people, like me, have a tough time digesting phytic acid. Phytic acid binds to minerals like zinc and iron, and when they bind, we don't reap the rewards of these important ingredients.

Soaking and dehydrating your nuts helps reduce the phytic acid. You know what else does? Limiting the number of nuts you eat.

Grains are out too, as well as sugary dates, honey, or maple syrup. I subbed just a few drops of Stevia to keep your blood sugar balanced because you really should have energy after eating a protein bar like this, not drop into a food coma.

I love seeds and decided to give them a starring role in these paleo super seed bars. I like to buy raw, organic seeds, and I do soak and dehydrate them before using. 

There are some great healthy fats in here like cacao butter and coconut oil. Those keto-friednly fats will keep you full and focused - a combo you want in a healthy snack bar.

Best of all, you get to keep your oven off. These seed bars just need some time to set-up in the fridge. Once they come together, slice and enjoy, and stay fueled between meals!

No Bake Super Seed Bar
{Nut Free, Grain Free, Sugar Free}

Makes About 12 squares

Ingredients

  • 1/4 cup flax seeds
  • 1/2 cup raw sunflower seeds
  • 1/2 cup raw pumpkin seeds
  • 1/4 cup hemp seeds
  • 1/4 cup sesame seeds
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil, melted
  • 1/4 cup cocoa butter, melted
  • 5 drops stevia
  • 1/2 teaspoon salt

Instructions

  1. Grind the flax seeds into a fine powder. You may need to do this in a coffee grinder or high speed blender.
  2. Place the ground flax seeds in a food processor, along with the remaining seeds and vanilla. Pulse until mostly broken down. You don't need to over-process it into a nut butter as it can be nice to have a little crunch.
  3. Add the remaining ingredients and blend until combined. Again, no need to overblend if you want a little texture in your bars.
  4. Place the seed mixture into an 8x8 glass pyrex. Press down on the top for a smooth layer, cover, and then place in the refrigerator to set for at least an hour. Cut into squares and enjoy. Keep refrigerated.
