You know how good salmon is for you, right? There’s the amazing Omega 3 benefits of salmon, not to mention all of the great vitamins and minerals.
I used to be nervous to cook salmon in my own house. I didn’t want the smell lingering for days, and of course I didn’t want it to taste “fishy.” That’s why I went with some bold flavors with this spicy cilantro lime baked salmon.
Not all salmon is created equal. Unfortunately due to the state of our polluted waters, you want to be very careful about the salmon you purchase so you don't get a side of Mercury with your fish. I always check Seafood Watch before buying any seafood to make sure it’s the best choice.
You definitely want to look for wild salmon, ie., salmon swimming freely where they please. And the other thing to look for is wild salmon from Alaska. It's the most sustainable with the least amount of pollutants in the water. Wild salmon from Alaska - got it? I get mine online here.
Now that you know what fish to get, the rest is easy. I made a marinade that doubled as a cooking sauce. I put the spicy lime cilantro mix on the salmon about 30 minutes before cooking, but you can also just throw it on before you bake it if you're short on time.
I also like a little heat in my dishes so I threw in some jalapeno and think it balances well with the lime and cilantro. Add more or less depending on your spice comfort level.
You can throw this salmon in a grill basket for your BBQ, or just slide it in a glass pyrex for the oven. Both are easy and you can have a healthy dinner on the table in no time.
Spicy Cilantro Lime Baked Salmon
{Paleo, Whole30, Gluten Free, Dairy Free, Grain Free}
Serves 4
Ingredients
1 pound wild Alaskan salmon (I buy mine here)
Juice and zest of 1 lime
1/4 cup cilantro, stems removed
1/2 jalapeno, seeds removed
1 garlic clove
1-1/2 tablespoon olive oil
Salt and pepper to taste
Instructions
Preheat the oven to 400.
Place the lime, cilantro, jalapeno, garlic and olive oil in a food processor and blend until combined. Season with salt and pepper.
Rinse and pat the salmon dry and place it skin down in a large glass pyrex dish. Spoon the lime mixture on top of the salmon and place in the oven.
Bake for about 15 minutes or until cooked through.
