Sunflower Tahini Cucumber Roll-Ups
These sunflower butter tahini cucumber roll-ups are a perfect after-school snack for kids (and adults!). They're gluten free, dairy free and nut free, and full of protein and vitamins.

It’s back-to-school time for many out there. While I can’t help with much advice in the kid department, I can offer an easy after school recipe to keep your kids healthy and satisfied with these sunflower tahini cucumber roll-ups. And hey, they're a great snack for adults too!
There are a growing number of people who suffer from allergies that range from gluten to dairy and sadly, these allergies often include a variety of nuts. Peanuts have been an increasing problem for kids, and subsequently for school and airlines who now limit their nut distribution. Peanuts are also known to be fungus-friendly, so even if you don't have a severe allergy, there's a good chance that the peanuts you're buying from the big box grocery stores have been growing in mold. Moldy peanuts? No thank you.
I certainly don't want a side of mold with my food, so I've been off peanuts for a while now. Luckily there are many seeds that don't run the same mold risk like nuts do, and also many more people can tolerate seeds, without allergies. Sunflower seeds are a great swap if you love peanuts and hate mold. Sunflower seed butter has a pretty similar taste and can easily, and tastily, step in when you're trying to avoid peanut butter.
You ready for all of the sunflower seed benefits: Vitamin E is at the top of the list with 82% per 1/4 cup. That means hello anti-inflammatory effects, and the addition of folate in the seeds helps promote cardiovascular health. You also get heart-friendly and calming magnesium, which most people are deficient in, phytosterols to lower cholesterol, and selenium for detoxification and cancer prevention. How's that for a power line-up?
You can eat the seeds straight up, preferably raw, or have them ground in a tasty sunflower seed butter.
