Spicy Black Bean Guacamole
Breathe new life into many dishes with this spicy black bean guacamole. It has just the right punch for a stand-alone appetizer or snack, or throw it on top of your favorite protein.
I could eat avocados everyday, and I pretty much do.
Avocados are a good healthy fat and they have protein too and just taste really dang good.
I like throwing it in salads, tossing it with quinoa and vegs, and even making a sauce out of it.
But there's nothing quite like guacamole.
I grew up eating guacamole and could (and do!) eat it by the spoonful.
So I decided to spruce up my guac recipe by throwing in some black beans for even more protein and substance, and I'm always a fan of upping the spice level, so in went some chipotle peppers.
This spicy black bean guacamole is great on chips or layered onto tacos.
I've even been throwing it on a gluten free tortilla and topping with some grilled shrimp for a complete meal.
It's an easy crowd pleaser that's healthy and full of great nutritional benefits.
Spicy Black Bean Guacamole
{Vegan, Gluten Free, Grain Free, Dairy Free, Vegetarian}
Makes about 2 cups
Ingredients
2 ripe avocados, peeled and cored
1-1/2 cups of black beans, rinsed
1/2 bunch of cilantro
Juice of 1 lime
1 chipotle pepper - seeds removed for less heat
1/2 teaspoon Sriracha
1/2 teaspoon Celery Salt
Instructions
Place avocados and black beans in a large bowl and mash until large pieces are broken up, but it's ok to keep a few chunks. Add the remaining ingredients, stir and serve!
