Paleo Sweet Potato Sausage Stuffing {Grain Free, Gluten Free, Dairy Free}

Stuffing is the best dish at Thanksgiving. Am I right?
It’s always been my favorite turkey day item, but traditionally, stuffing is loaded with different kinds of bread and fillers. Luckily my paleo stuffing is grain free, gluten free, dairy free, and sugar free.
With all of those allergy free-froms, you might be a little wary that this healthy Thanksgiving stuffing is free from flavor. Oh, but it’s not.
First you start with sausage, which is a taste powerhouse all on its own.
Then you have sweet potatoes bringing you know, the sweetness, as well as some nice texture. I roast the sweet potatoes and then half way through, I add some coconut flour to crisp them up even more. So the sweet potatoes kind of take the place of any sort of bread product in your paleo stuffing.
The classic stuffing flavors are still still here with a sauteed mix of onions, celery, apples, sage, and thyme.
I cook all of the sweet potato sausage stuffing elements on their own, and then bring them together at the end.
If you make the dish on the spot, it really doesn’t need any additional time in the oven. I also don’t need my stuffing to be like a cake where you slice a piece of it. I like my stuffing scattered on top of my turkey, or even chicken, and then drizzled with a little gravy.
You can always heat everything up again in the oven, and if you do, you might want to throw a little broth in so nothing dries out.

Paleo Sweet Potato Sausage Stuffing
{Grain Free, Gluten Free, Dairy Free, Sugar Free}
Ingredients
1 pound of sweet potatoes, peeled and diced in 1” cubes
2 + 1 tablespoons ghee, avocado, or olive oil
2 tablespoons coconut flour
1 pound pork sausage
2 cups white onions, diced
1 cup celery, diced
1 cup apple, diced
2 tablespoons fresh sage, chopped
2 tablespoons fresh thyme, chopped
Salt and pepper to taste
Instructions
Heat the oven to 450F.
Drizzle the sweet potatoes with 2 tablespoons of ghee or oil, and salt and pepper. Bake in oven for 15 minutes and then remove. Sprinkle with coconut flour, stir, and return to oven. Cook approximately another 10 minutes or until the sweet potatoes begin to crisp and then remove from oven.
Meanwhile, brown the sausage in a medium pan until cooked through. If there’s excess fat, remove from pan.
In another skillet, heat 1 tablespoon of ghee or oil in a large skillet. Add the onions and saute for 10 minutes or until they become translucent. Then add the celery, apple, sage, and thyme and saute another 5 minutes. Combine with the cooked sausage and stir.
Place the sausage mix and sweet potatoes in a large dish and mix. Serve and enjoy immediately. If you’re heating it up later, add a little broth so the mixture doesn’t dry out.
