I love Mediterranean flavors.
They're light and bright and after a big Thanksgiving dinner, it's a refreshing change.
Then there’s vegan tzatziki.
It's great on so many things, but I especially love it as the piece de resistance on these turkey wraps.
My gluten free wrap of choice is the NuCo coconut wrap, but I've also wrapped these in lettuce leaves and that works really well too.
If you've already eaten all of your turkey, feel free to use roast chicken in here.
The chicken and tzatziki also make for a good combo.
Not every meal needs to take hours or days long. And most meals shouldn't throw you into a food coma!

Turkey Tzatziki Wrap {Paleo, Gluten Free, Dairy Free}
Makes 4
Ingredients
1 pound of cooked turkey or chicken, shredded or cubed
1 cup of vegan tzatziki (recipe here)
4 coconut wraps (I like these) or 4 large lettuce leaves
1/2 cup black olives, pitted and diced
Optional toppings: tomatoes, cucumbers, chopped lettuce
Instructions
Set your coconut wraps or lettuce leaves on a flat surface. Arrange 1/4 cup of the turkey or chicken down the middle of each and top with tzatziki, olives and any other optional condiments. Roll and enjoy!
