I hear from sooooo many people how busy they are. Work, obligations, family, and friends, it can be quite a balancing act to fit it all in. Health usually gets dropped to the bottom of the list. People always seem to take care of everyone around them before they take care of themselves. We don’t have time to get into that now because we’re cooking here.
I want to save you from picking up some bad fast food on the way home from work. So I’m going to hook you up with this easy sausage and kale skillet recipe.
You can make this meal in under 30 minutes.

All you have to do is saute some kale. Don’t like kale? Use spinach or collard greens or any other hearty green of your choosing.
Grab some sausage. Of course try and look for nitrate free with minimal ingredients. We want to keep you healthy.
Don’t like sausage? Throw in chicken, steak, fish, or tofu.
To top things off, this sausage kale skillet has a finger lickin’ good sauce. It’s simple but packs a nice little punch.
All it includes is a little Dijon for zip and some coconut aminos for natural sweetness.

Easy Sausage and Kale Skillet
{Paleo, Gluten Free, Dairy Free}
Ingredients
12 ounces linked sausage (nitrate free)
1 tablespoon ghee or avocado oil
2 bunches of fresh kale, stems removed, coarsely chopped
2 teaspoons Dijon mustard
2 teaspoons coconut aminos
Instructions
Cook the sausage in a medium pan over medium heat.
Heat the ghee or oil in a separate pan and then add the kale and stir. Cover the pan for about 5 minutes, stir the kale, and cook another 5-10 minutes or until the kale is appropriately wilted and cooked through.
Turn the kale to low heat, and add the Dijon mustard and coconut aminos and stir.
Once the sausage is done, cut into small pieces and add to the kale. Adjust seasoning as necessary. Enjoy!
